Mexican Cauliflower Rice
The perfect side or meal for winter (or any time of year)! This cauliflower rice is low-carb and flavorful. Try it in a low-carb tortilla with low-fat turkey meat.
Ingredients
- 1 green pepper, chopped
- 1 cup chopped tomatoes
- 1 lb bag of cauliflower rice (found in the fresh produce department)
- ½ cup tomato sauce
- ½ tsp. dried onion flakes
- ¼ tsp. garlic powder
- ½ tsp. cumin
- 1 tsp. paprika
- ¼ tsp. crushed red pepper flakes
- salt & pepper to taste
- fresh cilantro for garnish
Instructions
Sauté the chopped green pepper and tomatoes; add in the cauliflower rice and remaining ingredients, mix, and continue to cook for another 5 minutes. Be careful not to overcook or the cauliflower will become too soft.
