Creamy Spinach & Mushroom Chicken

Enjoy comfort food guilt-free with this creamy spinach and mushroom chicken recipe!


  • 4 boneless chicken breasts, pounded flat
  • 2 tsp. seasoned salt
  • 8 oz. sliced baby portobello mushrooms
  • 2 cloves garlic, minced
  • 9 oz. fresh spinach
  • ½ cup chicken broth
  • 2- 1 oz. wedges Light Laughing Cow cheese
  • ¼ grated parmesan cheese
  • fresh basil or tarragon to garnish

Season the chicken on both sides with seasoning salt; grill and keep warm. Meanwhile, sauté the mushrooms and garlic (with a little broth) in a very large skillet, until tender and slightly browned. Add the spinach to the mushrooms and cook just until wilted. The skillet will be very full, but the spinach will quickly cook down. Add the Laughing Cow cheese and broth, salt and pepper to taste. Stir all together to ensure the cheese melts creating a creamy sauce. Add the chicken back to the sauce/pan and serve garnished with fresh herbs as desired.
