Vegetable Tofu Scramble

Check out this healthy, vegan take on vegetable scrambled eggs. By swapping eggs for tofu, we lower fat and cholesterol while losing none of the delicious taste! 🥕🍅🧅

Ingredients:

  • 14 oz. firm tofu, drained
  • 1 small onion, diced
  • 1 tbsp. chicken style seasoning (*see below)
  • Veggies: mushrooms, peppers, spinach
  • Garnish with fresh cilantro or parsley

Instructions:
In a large nonstick skillet over medium heat, crumble the tofu, add the diced onion and chicken style seasoning. Sauté the tofu and onion until it starts to brown- about 30 minutes. Then add additional vegetables of choice, continue to cook until the vegetables are tender and the tofu is browned/crisp to your liking. Garnish as desired.

* Homemade Chicken-Style Seasoning * Blend the following in blender: 1 1/3 cup nutritional yeast flakes, 2 ½ tbsp. salt, 3 tbsp. onion powder, 2 ½ tsp. garlic powder, ½ tsp. celery seed, 1 tsp. turmeric, 2 tbsp. Italian herb seasoning; then stir in 2 tbsp. dried parsley. Store in a glass jar. Seasoning can be used for any recipe calling for bullion or chicken broth (1 tsp. seasoning per 1 cup of water)
