Unstuffed Cabbage Roll Stew

Get ready to tantalize your taste buds with our newest dietician recipe – unstuffed cabbage roll stew! Packed with all the mouthwatering flavors of a traditional cabbage roll, this dish is the perfect combination of hearty and nutritious. (No rolling required)

Ingredients:

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper (any color), diced
  • 1 lb. lean ground turkey or beef
  • 2 carrots, diced
  • 1 (14.5 oz.) can tomato sauce
  • 1 (14.5 oz.) can diced tomatoes (I like fire roasted)
  • 4 cups beef or chicken broth
  • 1 cup riced cauliflower – optional
  • 6 cups chopped cabbage
  • 1 bay leaf
  • 1 Tbsp. Worcestershire sauce
  • ½ tsp. dried oregano
  • ½ tsp. dried thyme
  • 3 Tbsp. Swerve brown sugar
  • salt & pepper to taste
  • fresh parsley to garnish

Instructions:
 
Heat a large stock pot, add onion and sauté 4-5 minutes in a little broth, until translucent. Add minced garlic and cook another 30 seconds, stirring constantly. Add ground meat and cook until browned. Add all remaining ingredients and simmer for 30 minutes or until the cabbage is tender. Alternately, roughly combine all the ingredients in a slow cooker and cook on low 6-7 hours or high 3-4 hours. Stew is even better the next day!
